Quinoa Citrus Mint Salad
1 C Quinoa (red is suggested, but you can use white)
1 C red/yellow/orange peppers, finely chopped
1 C celery, chopped 1/3 C onion, finely chopped
½ C carrots finely chopped
½ C cucumber finely chopped
½ C The Tasteful Olive’s mild or medium intensity olive oil
½ C The Tasteful Olive’s Citrus Mint balsamic vinegar
1 tsp black pepper
Optional: Lemon Sicilian balsamic vinegar to taste
Cook 1 C quinoa according to package direction. Chill. Mix chopped veggies with quinoa. Blend olive oil, balsamic, pepper together then pour over vegetables and chill for 8 hours. Serve on bed of lettuce or stuffed in tomatoes or peppers. Serves 8.
