Ingredients
½-1 C white quinoa, cooked
½ a can garbanzo beans, rinsed and dried OR a cooked protein of your choice
1-2 small handfuls of baby kale (raw)
Small handful cherry tomatoes, sliced in half
Small handful of diced cucumbers
Kalmata Olives, pitted
2-3 Sundried tomatoes, diced
Feta cheese
The Tasteful Olive’s Oregano & Apricot balsamic vinegars (or your choice)
The Tasteful Olive’s Gremolata olive oil (or your choice)
Sea salt & fresh cracked pepper
Heat olive oil in a small pan. Add garbanzo beans to pan and saute for about 5 minutes, until slightly browned. Drizzle in the Apricot balsamic and saute for another 5-10 minutes, until the balsamic begins to caramelize on the beans. Remove from heat. Place all ingredients in a bowl. Drizzle olive oil, Oregano balsamic & Apricot balsamic over the top. Salt and Pepper to your liking. Serves 1-2. Enjoy!
