Marinade Variations for Duck

Ingredients:                                   Serves:

About 9 slices of duck meat, about 1/4-1/2" thick (from smaller ducks). You may cut into long strips 1/2" wide or cut into cubes (for quick saute)

4 T oil (such as high-heat Tasteful Olive's Korosafflo high-heat blended oil from the store or Grapeseed Oil

Directions:
Place meat slices into well-combined marinade ingredients. Let sit in refrigerator for at least two hours before using. If you haven't cut the duck slices, do so now. In a large non-stick skillet, place 4 T oil (such as high-heat Tasteful Olive's Korosafflo high-heat blended oil from the store or Grapeseed Oil). On medium-high allow oil to get hot then make one layer of the duck pieces. Saute on both sides until done. (Burner may need to be turned down to medium heat). Watch for spattering of oil (turn your fan on to avoid burns). *You may need to add more oil depending upon amount of fat in the meat. Marinade may be heated and also used as a dipping sauce for the meat.

Variation #1:

3 tsp Herbs de Provence Spice Blend from The Tasteful Olive

3/4 C Tasteful Olive's Traditional Balsamic Vinegar

6 T Tasteful Olive's Tuscan Herb Extra Virgin Olive Oil

3/4 tsp small garlic pieces

1-1/2 tsp minced dried onion

 

Variation #2:

3 tsp Tuscan Spice Blend from The Tasteful Olive

3/4 C Tasteful Olive's Strawberry Balsamic Vinegar

6 T Tasteful Olive's Garlic Extra Virgin Olive Oil

3/4 tsp small garlic pieces

1-1/2 tsp minced dried onion

 

Variation #3:

3 tsp of a Korean BBQ spice blend

3/4 C Tasteful Olive's Tangerine Balsamic Vinegar

6 T Tasteful Olive's Blood Orange Fusion Extra Virgin Olive Oil

3/4 tsp small garlic pieces

1-1/2 tsp mined dried onion

** For this variation, you can add your favorite BBQ sauce on top of the slices. A simple sweet BBQ sauce is: 1 T vinegar, 2 T brown sugar, 4 T ketchup.
