1 C white rice 1 C brown rice 2 C broth
2 C water 1 bunch finely chopped cilantro
2 lemons, one juiced & second sliced into thin wedges for serving
4 T The Tasteful Olive’s Lemon olive oil
1 tsp The Tasteful Olive’s Himalayan Pink sea salt
2 tsp The Tasteful Olive’s Garlic & Herbs (salt free) seasoning
1 can drained & rinsed black beans
Rinse and drain rice. Add rice, broth, water cilantro, lemon juice, Lemon oil, salt, Garlic herbs and black beans to your cooking vessel. (the rice will double so use a good-sized container with a tight fitting lid). Place over medium high heat and stir; bring to boil; reduce heat to low, cover and cook for 20 min. Take off heat, make sure no water remains (if there is water, cook for 5 more min). Let rice set for a few min, then fluff with fork. When serving, top with cilantro (or parsley) and wedge of lemon. OPTIONS: Top with shredded meat; add ½ diced onion; top with green onions.
Dressing to serve with rice:
½ C The Tasteful Olive’s Lemon olive oil
¼ tsp The Tasteful Olive’s Himalayan Pink sea salt
¼ C The Tasteful Olive’s Jalapeno balsamic vinegar
Mix well and serve over rice
