Crustless Sweet Potato Pie

Pie Ingredients:

2 C mashed sweet potatoes or 15oz can plain pumpkin (bake 3 medium sweet potatoes at 350 for 1 hr. until soft, let cool, peel and mash or blend until smooth)

¼ C almond milk (or milk of your choice)

2 tsp/ fresh grated ginger

2 tsp cinnamon

¼ tsp nutmeg

4 eggs

1 cup sugar/ maple syrup or sweeter or your choice

½ tsp Vanilla or Pink Himalayan Salt

2 Tab Vanilla Balsamic

¼ C Maple Balsamic reduction

2 Tbsp. butter olive Oil

Flavored Whipping Topping

1 small tub thawed cool whip

Maple or Vanilla Balsamic to taste

 

1. Prepare 8x8 pan by coating completely with butter olive oil. Preheat oven to 350’ F for a glass dish, 375’ for dark pan.

2. Add all pie ingredients and whisk until smooth.

3. Pour into prepared pan and smooth the top surface. Bake 40 minutes; pie is done when you test the center with a toothpick and it comes out clean.

4. For one cup of whipped topping add 2 to 4 tsp maple or vanilla balsamic and mix well. Heavily dollop on cooled pie.
