Corn & Black Bean Salsa

2 cans corn, drained (or equivalent of frozen)

2 cans black beans, drained

1 avocado, diced

1 each red, orange and green pepper, diced

1 small can pitted black olives, drained and sliced

Queso Fresco cheese, grated

The Tasteful Olive’s Persian Lime olive oil

The Tasteful Olive’s Cayenne Fused olive oil

*save the liquid from the corn, beans and olive to add in case liquid is needed to keep salsa from getting dry)    

 

Mix together the corn, beans, peppers and olives. Add avocado just before serving, then drizzle with the Persian Lime olive oil and top with the grated queso fresco. Kick up the flavors with a few drops (or more as desired) of Cayenne olive oil.
