Chocolate Chip Cookie w/Espresso Balsamic

3-1/8 C brown sugar    

1 T The Tasteful Olive’s Espresso balsamic

2-1/4 C white sugar      

4 eggs

¾ C butter                       

1 T baking soda

½ C plus 1 T The Tasteful Olive’s mild unflavored EVOO

½ C shortening              

8 C all purpose flour

¾ T salt                             

2 C chocolate chips

½ T vanilla flavoring

 

Cream butter, oil and shortening together with sugars. Combine dry ingredients and set aside. Add eggs & vanilla to creamed ingredients. Add vinegar, dry ingredients, then the chocolate chips. Refrigerate the dough overnight. Bake at 350 degrees F for 12-15 minutes.

*Dough will keep in refrigerator for up to two weeks
