Chicken and Peach Quinoa Salad with Lemon-Ginger Dressing Serving: 2-4 Ingredients: 1/2 cup quinoa uncooked 1 cup corn 1-2 peaches cut in slices 1/3 cup Feta Cheese 1-2 chicken breasts Dressing Ingredients 2 Tbsp The Tasteful Olive Sicilian Lemon Balsamic Vinegar 2 Tbsp The Tasteful Olive Ginger Olive Oil Salt to taste
Instructions: Prepare the quinoa and the corn. Cook the chicken with salt and pepper and set aside to cool. Once cooled, slice the chicken, and mix it together with the rest of the ingredients. Salt to taste and drizzle the vinegar and the olive oil over the salad. Stir well and serve up! Tip: If you find the ginger olive oil too strong for you, try only using 1 tbsp of the Ginger olive oil and adding 1 tbsp of plain EVOO. |
