Ingredients
- 1 puff pastry sheet (thawed)
For caramelized onions:
- 2 red onions
- 1-2 tbsp olive oil or butter
- 1/4 cup The Tasteful Olive Italian Herbs of Naples Balsamic
- salt and pepper to taste
For goat cheese mixture:
- 5 oz goat cheese
- 1 tbps honey
- 1 tbsp The Tasteful Olive rosemary olive oil
- 1 tbsp yogurt
Directions
Cut the onions into thin slices and cook in a skillet with some olive oil or butter. Add some salt and pepper to taste. Cook until the onions are soft and starting to brown, then add the balsamic vinegar and cook until the balsamic is completely absorbed, about 5 more minutes. Set aside.
To make the goat cheese mixture, blend all the ingredients together using a blender, food processor, or immersion blender. This will turn the goat cheese into a creamy and spreadable consistency.
Preheat the oven to 350 F. Defrost the puff pastry sheet. Prick it with a fork, and spread the goat cheese mixture all over it, leaving a little bit of an edge. Then, top it with the onions. Bake for 20-25 minutes or until the puff pastry is golden.
Let cool for 10-15 minutes, cut into squares, and serve up with a drizzle of balsamic (optional).
