Bloody Mary Poached Crawfish Tails
In tomato panna cotta with red apple balsamic reduction
10# crawfish
1 bottle spicy Bloody Mary mix
2 oz Pepper Vodka
12 oz V-8 juice
1 T chipotle powder
½ C sugar
3 tsp cornstarch
3 tsp water
4 C The Tasteful Olive’s Red Apple Balsamic Vinegar
Combine first 4 ingredients and bring to boil, then let simmer for 15 minutes. Cool mixture.
For the Reduction: in a pot, combine chipotle powder, vinegar and sugar, then bring to simmer for 12 minutes. Thicken slightly more with cornstarch slurry. Then allow to cool.
