Balsamic Cranberry Relish
A heavy pot
1/8 C sugar (or more to taste)
1 package fresh cranberries
Tasteful Olive Apple Cider Vinegar
¼ C Port
Zest and juice of one orange
2 T of one of the following:
The Tasteful Olive’s Cranberry Pear, Cinnamon Pear or Lavender balsamic vinegar
In pot, add cranberries and enough apple cider to top the berries. Let simmer for about 15 min. Add zest, orange juice and sugar. Continue to simmer until liquid is reduced to half. Add Port and Violet vinegar. Simmer until berries begin to break down, but are not mushy. Remove from stove; let sit until cool. Refrigerate and store. Good for one week or can be frozen.
