(4-6 servings)
2 pints of Cherry Tomatoes
8 – 10 oz Goat Cheese or Feta block
1/3 cup of The Tasteful Olive’s Tuscan Herb Olive Oil
Salt and Pepper to taste
Handful of fresh basil
2 tbsp of The Tasteful Olive’s Fig balsamic vinegar
500gr of pasta – We suggest our “Leftovers” pasta from Italy (find in-store)
Preheat the oven to 400 degrees.
Boil water for pasta and cook pasta.
Place the tomatoes into a baking pan and drizzle them with Tuscan Herb olive oil, salt and pepper.
Toss them around and add the goat cheese or feta block in the middle of the pan. (if you want to add more sweetness, add 1-2 tbsp of honey)
Bake in the oven for about 20 minutes or until the tomatoes burst and the cheese is soft.
Add the fresh basil and the fig balsamic. Give it a good mix.
Stir in the cooked pasta and enjoy!
