Baked Chicken in a Roasted Onion-Cilantro and Jalapeno-Strawberry marinade

 

1.5 lbs chicken breast

¼ c. The Tasteful Olive's Strawberry Balsamic Vinegar

¼ c. The Tasteful Olive's Jalapeno Balsamic Vinegar

¼ c. The Tasteful Olive's Roasted Onion-Cilantro Olive Oil

Pinch of Tasteful Olive Himalayan sea salt

 

In a large bowl, whisk the oil, vinegar and salt together. Place chicken into the marinade and place in the refrigerator for 3 to 24 hours. Bake at 350 degree F for 25-30 minutes, or until chicken reaches 160 degrees F.

 

Serve warm or cold. For an easy weeknight meal, serve with Roasted Red Pepper Fettuccini and a Cilantro Pesto from The Tasteful Olive.
