Apple-Bacon Vinaigrette
Ingredients:
6 T The Tasteful Olive’s Gala Apple balsamic vinegar
1 tsp Dijon style mustard
4 T The Tasteful Olive’s Bacon Olive Oil
2 T finely minced shallots
½ tsp salt, and fresh ground pepper, to taste
4 slices center-cut bacon, cooked to a crisp, then finely crumbled
2 quarts young spinach leaves, stems removed, then washed
Directions:
Place spinach in a serving bowl. Place balsamic, half the crumbled bacon, salt, half the shallots, pepper and mustard in a small saucepan over medium heat. Gently warm while whisking. Remove from heat before it reaches a simmer. Allow to cool for a minute, then whisk in the Olive Oil to emulsify. Adjust seasoning. Gently dress the spinach with the warm vinaigrette and tip with the remaining crumbled bacon and shallots. Serve warm.
